Final Verdict:

This knife is made from a single piece of high-carbon, German stainless steel that is laser-controlled. It features double bolsters which provide heft and great balance for effortless cutting and a triple-riveted handle with innovative contoured design for comfortable and secure grip.

Wüsthof implemented their unique compound angle in the Ikon 8”. This angle is not seen in many knives. It tapers from the spine of the knife to the edge to allow for a sturdy, yet extremely sharp edge while it also tapers from the bolster to the tip to give the knife strength as well as flexibility.

The broad and natural flowing curve of the blade, combined with the nice weight of the handle makes the cutting motion very fluid and easy on the wrists. It makes everyone more confident with the knife and it’s great for someone that is learning how to cook and still provide precision and sharpness to cut a tomato paper thin.

The combination of its sharpness and easy grip handle will reduce slips which results in reducing cuts and injuries with daily or weekly maintenance on a steel, depending on how often the knife is used. Also, the double bolsters make the whole knife edge usable and it can all be sharpened.

When it comes to real life, food chopping, it is most optimal for tackling veggie preparations. It is far superior than any other serrated knives for work on small melons, cantaloupes, grapefruit and even skinning and chunking up a pineapple. It can also cut through cheese slices, sandwiches, cakes (including ice-cream cakes) and make cold cuts with ease.

One thing to be aware of is that the bottom of the half bolster where it meets the heel is very sharp as well. This makes it easy for anyone to cut themselves while washing the knife. However, you can ground it down smooth at any sharpening service. This should fix the problem.

The Ikon 8” Knife is backed with a limited lifetime warranty. They stand behind their product pretty well and guarantee the sharpness and durability of the knife. Hand washing and towel drying is recommended for this knife because of the thin and sharp edges. If put in a dish washer, it may crack or fracture the edge.
