This Wusthof Classic 8″ forged chef’s knife is a solid piece for anyone looking to upgrade to a professional grade chef’s knife. It’s perfect for slicing, mincing, and dicing all kinds of food. Each exquisite Chef’s knife is forged from one piece of specially tempered high carbon steel with a stain-resistant alloy. It’s buffed by hand and seamlessly attached to a highly durable polymer handle. The Final Verdict

Perfect for slicing, mincing, and dicing all kinds of foods, the Wüsthof Classic 8” Knife was developed in consultation with professional chefs. Its heavy 8 inch blade is precision forged from a single blank of high quality steel with bolster and full tang ergonomic handle.

To get the thick blade razor sharp, the Classic 8” it’s hand-honed and hand-polished. The handle is a traditional-style that is triple-riveted for strength, performance and durability. It is virtually impossible to separate the blade from the handle with regular use.

This knife is really is a beast in the kitchen! You can cleave, drop, bang, rattle and it just begs for more.  This is a marked difference from some of the Japanese knives we’ve reviewed.

Though it is very durable, with heavy use, it will lose its factory edge. But that is no worry because it is very easy to sharpen, so even the ‘professional’ sharpeners out there will likely sharpen it correctly. Also you can sharpen it yourself with a few swipes on the Wüsthof electric sharpener or it takes about 15 to 20 passes through the coarsest sharpener. This knife is hard to beat or compare to others when used properly.

There is a small learning curve, but it is absolutely worth checking some guides. From our research and tests, the Wüsthof Classic 8” knife performs the best when using the “pinch grip”.  Simply hold the grip on the top of the blade between your thumb and index finger, forward of the bolster, and wrap the rest of your fingers around the handle.

This grip will give you better control, straighter cuts, and narrower slices than wrapping all fingers around the handle allows. Using the grip described above, one merely rolls the knife back onto the item being cut, lifts the back only, and repeats, sliding the food into the knife. The front of the blade merely rolls and slides on the cutting board, and is never lifted.

On the downside this knife is fairly expensive, but it’s a great investment for the home chef that is looking to upgrade to a higher performance chef’s knife.  While it’s not of the same quality as the Ikon, this is a very capable companion for any budding chef. Do yourself a favor, get the right tool for the job.

Wüsthof claims that the Classic 8 inch knife is safe to wash in the dishwasher and no doubt that it safe. But all that aside, we recommend not to put a knife of this quality in the dishwasher.  If you’re worried about salmonella after using it on poultry, a spray of kitchen disinfectant or of a dilute bleach solution will take care of that.

Plan to hand wash it immediately in hot soapy water.  Learn to use a steel properly and sharpen with a good quality sharpener as needed.
